Human eyes are positioned facing forward, providing a narrower field of vision but giving us depth perception by binocular vision. The eyes of sheep are positioned to the side of the head, and provide a greater field of vision overall but less depth perception. This difference is because to survive, humans have developed to look/hunt for things accurately gauging distance. Sheep on the other hand don't need depth perception to find grass in front of their noses, but as a prey/herd species needed to see the predator animals coming from angles behind them and be able to run away.
Another difference is that human eyes have a greater number of cones, which provide better color perception and crisper vision, and a special area called the fovea which is an area of only cones that can be used to focus on a specific area of interest. Sheep have more rods than cones and have generally poorer detail vision and worse color perception than humans.
